In the latest iteration of the Defy – which, as you might recall, really has no dial at all – the brand has given its modern El Primero 21 chronograph movement a colorful PVD treatment coupled with a matching gem-set bezel and rubber strap in five bold hues, offering an entirely new approach to vivid, kinetic vibrance. Each tone – green, orange, blue, purple, and black – is available in a limited edition run of just 10 watches, forming the new Defy Spectrum collection.Peer into the open kitchen at Liao breaking down a fish, and you're likely to spot the Rolex Milgauss on his wrist. "When I'm sticking my hand inside a fish, I'm usually wearing the Milgauss. It's been my workhorse for a while now" he says. It's a new Deepstar Chronograph that's a lot like the previous Deepstar Chronograph – and that's a good repliky rolex hodinky thing. As is almost invariably the case with perpetual calendars, much of the complexity of the watch is hidden from view under the dial – the traditional location of the cadrature (under the dial mechanisms) for not only perpetual calendars, but for repeating watches as well. The caliber BVL 305 does not look all that different from the time-only version in the Octo Finissimo Ultra-Thin Automatique, at least through the caseback.
