Quinoa is just a seed, but has the peculiarity that can be eaten as a cereal (made by which is also known as pseudocereal). It comes from the family of spinach and beets, and Bolivia has been grown and used for centuries as a staple food in the diet. So much so, that his name, quinoa, cereal means mother.
